Restaurateur Fernando Aracama’s ‘fast and furious’ Kansi cooking

Restaurateur and celebrity chef Fernando Aracama took a short cut on the famous Ilonggo comfort food, Kansi, last week when he used a pressure cooker to immediately satisfy his craving.

For non-Ilonggos or Negrenses, Kansi can be considered a cross between a bulalo and sinigang. It has a rich broth that comes from slow cooking the beef bones/shank and it is flavoured with batwan or batuan, a small fruit similar to mangosteen but sour.

He may have compromised on pressure cooker but he did use batwan, a rare treat if you’re not in the Visayas.
