Chef JM puts own twist to old family recipe
Part of the food appreciation experience is tasting familiar food infused with new techniques that makes it even more flavorful and exotic.
La Madera Gastropub’s Chef JM Sunglao is unafraid to spin even old family recipes to make sure that diners get to enjoy food what his family has been enjoying for years, making it even more special by adding his own unique twist to it.
In the restaurant’s recent Instagram post, Chef JM shared a photo of their La Madera Sisig which is a classic Kapampangan dish that incorporates crispy pork cheeks, pig ears, chicken liver, to form a favorite lunch or dinner dish , which even qualifies as finger food for a night out with the gang.
Chef JM adds his own twist to it by adding a Thai inspired “eggnet” instead of mixing the egg with the meat. This helped the dish retain all the umami and smoky flavors strong.

La Madera more than qualifies as a “gastro pub” with its gourmet take on food. As a Kapampangan, Chef JM grew up cooking alongside his Lola, whom he learned some of his recipes from. These include La Madera’s Sisig, which boasts of authentic Kapampangan style crispy pork cheeks, pig ears, chicken liver and topped with Thai-inspired “eggnet”.
