La Paz Batchoy to be served at World Street Food Congress
La Paz Batchoy, the pride of Iloilo, will be one of three dishes from the Visayas which will be showcased at the World Street Food Congress and Jamboree (WFSC) on April 20-24 at Bonifacio Global City in Taguig City.
The Philippine Information Agency reported that La Paz Batchoy of Iloilo was chosen to represent Western Visayas, Kinapusan (crispy pork) of Cebu for Central Visayas, and Tahong Lumpia of Tacloban City for Eastern Visayas.
Helen Catalbas, Tourism Western Visayas regional director, was quoted as saying that the three dishes were picked because they “highlight the culinary experience of each region.”
Catalbas said the dishes will be served to an estimated 800 to 1,000 people daily during the five-day event by Chef Dennis Jay Uy of Maximama Cucina Latina and former Corporate Executive Chef of Maribago Bluewater Resort and Spa and his sous chef.
