Chef Gene goes sentimental with Escudella

For Chef Gino Gonzales, cooking escudella is a sentimental journey.

In a recent post, the renowned chef shared that preparing the dish, which is a Spanish stew that is made up of sausages, chicken fee, gizzards, prosciutto bone, lamb shanks as well as a wealth of aromatic herbs and spices that is typically prepared for Christmas, was a bonding time for himself and his two children when they were little.

He also shared that they also have their own version of the dish which is more similar to the gumbo than the traditional stew.

“Our Escudella has evolved to almost a gumbo, this hearty soup was something I used to cook with Gino and Giannina while they could stand up on stools. A mix of Beef, 3 types of sausage, Italian Pancetta, Ham , barley, white beans, red beans,mirepoix, 3 kinds of pasta, and a whole slew of aromatic hetbs and spices,” he captioned the video of his preparation of the stew.

Kids, they grow up so fast. But it helps to have these types of memories and experiences to bond families.
