Behind the scenes: Inauguration food preps

Hours before the start of the inauguration rites of the 16th President of the Republic, the staff of Via Mare, the official caterer for the event, were already on the go in the Malacañang kitchens, in preparation for the food to be served.

Days before the event, the 5-dish menu was already released which includes Monggo soup, smoked fish with alugbati in demitasse cups, Pandesal with kesong puti and Vigan longganisa grilled on the spot, lumpia ubod pouch, Fried saba using Carbava banana and Durian tartlet, Rappler said in a report.

The newly inaugurated president ate with the diplomats in Malacañang’s Presidential Hall, while his other guests will dine at the Heroes’ Hall, Rappler reported.

Duterte instructed his inauguration committee to as much as possible, keep the occasion simple, hence the menu having 5 Pinoy favorite dishes. However, Liset Marquez, a committee member, told Rappler that larger servings of the dishes made up for the limited kinds of food served.

Marquez also added the significance of each dish. The monggo soup was Duterte’s favorite and durian, a Davao City specialty, signifies Duterte’s time as Davao City mayor, the report said.
