For those who are wondering, the dessert is from Manila Hotel’s Cowrie grill. It’s called Baked Alaska, a sponge cake filled with fillings and crowned with meringue. The brandy flambé makes the meringue toasted brown. When in Manila said that the dessert “gives a refreshing twist with the cold ice cream inside and the hot meringue outside, hence its name Baked Alaska, in reference to the igloos of the Eskimos of Alaska.”
Want to bake your own ‘lit’ dessert? Fortunately, Mia and Terri of Dear Martini blog shared a recipe for Baked Alaska. The chefs said that the liquer is responsible for the flame effect. Any of your favorite distilled eau de vie – must be at least 40% alcohol by volume, can be used for the dessert.
