Spanish chefs showcase cooking skills at Madrid Manila Fusion
Spanish chefs Paco Pérez of Miramar, and Kiko Moya of L’ Escalante showed off their cooking prowess during the afternoon session of Madrid Fusion Manila on Friday.
The two renowned chefs discussed the significance of avant garde in their cooking, ABS-CBN reported.
Perez utilized his food serving as a medium to convey a message to the customers. Some examples include a drink made with hydro-honey from their own bee farm, and a “honeycomb”.
Meanwhile, Moya exhibited Saffron, a Spanish staple.
“Saffron is very important in Spanish culture,” Moya told ABS-CBN “and we are able to protect it and save it in this way”, he added.
Moya made a sabayon, making a custard with freeze-dried saffron roses, topped with freshly harvested pollen and freeze-dried raspberries for additional sweetness.
