Laswa: the healthiest hangover soup
Forget the artery clogging papaitan. Don’t even think of bulalo or batchoy.
If you partied too much the night before, laswa is a hangover antidote to try. I was first introduced to it by a friend some years back. I grew up in Manila and laswa means something else to Tagalogs.
Laswa is a vegetable soup from the Visayas. I loved it the first time I had it. It’s clean but sweet and really easy to cook. If you’re a pakbet fan, you might want to give laswa a try since it uses pretty much the same veggies.
Here’s how we do it at home:
Bring to a boil, coconut water from one nut
Lower the heat and add: 2 tomatoes, chopped
1 onion, chopped
Simmer for about two to five minutes.
Add: about 400 grams squash, cubed
Simmer for about five minutes.
Add: 250 grams eggplant, quartered
250 grams okra
Cook for another five minutes. Season with salt. Add fresh malunggay leaves and turn off the heat.
You can adjust how much eggplant or okra you can use depending on what you like more. Can anything be easier than this?
