I used to seeThis woman salad maker ( of ethnic origins obviously because of her wide variety of ingredients aside from green papaya ,she had caramay, green mangoes and tamarind . I used to see this woman under the bridge crossing platinum and pratunam and she made her salads at lightning speed but always consistently good and pricier because she had a clientele and a follwing. Though done with speed her dressings are always exact and her technique is impeccable. I ask her to make a Santo where in seconds she peeled , slivered it and put in fermented crab,kapi, shallots, fish sauce , a touch of lime , dried shrimp and palm sugar . It was delightful and powerfully umami filled needing little bites of Khao niew or sticky rice. The tannins of the santol were neutralized and what came out were the floral and strong fermented crab and kapi. This was chased by sucking on the sweet slippery seeds of the santol that seemed to balance the robust salad components. This was something I have been dreaming of for the past months and obsessively had to fit my short lunchbreak to have a Doods Grilled Tuna Jowl…. freshly off the grill, moust , juicy with its creamy oils tamed by a dip of coconut nectar vinegar, soy sauce , calamansu and a couple of fiery siling labuyo….
