Watch Anthony Bourdain release exclusive clip of new food waste documentary
Anthony Bourdain is a busy man, and as such he will not only release the newest season of his hit CNN series, Parts Unknown, he also just released an exclusive clip for his new documentary film, Wasted! The Story of Food Waste, set to hit theaters on October 13.
The new clip features Chef Dan Barber of New York restaurants Blue Hill and Blue Hill at Stone Barns preparing what Bourdain calls a, “truly sustainable plate of food.” Barber uses ingredients usually discarded by fine-dining menus to create more sustainable food.
“Fishermen’s wives took the damaged and unsellable fish, and they created a big stew of all this reject fish and called it a bouillabaisse,” Barber says. “Prosciutto di parma: That pig is a waste-fed pig, but you don’t call it ‘waste pork.’
That’s why these dishes become so important, because they’re not sold as waste, they’re sold as what they are, which is delicious dishes.”
