Food Network puts a different twist to chicken adobo
One of the most popular Filipino dishes is undoubtedly the adobo.
Food Network host Geoffrey Zakarian recently shared a new spin he had for the classic dish. While most Filipino households combine the ingredients while cooking it in the pan, Zakarian combined soy sauce, white vinegar, some brown sugar, black pepper, and habanero pepper inside a zip lock bag with the chicken.
To make sure that the chicken absorbs all of the flavors, the chef recommended that the chicken be kept inside the refrigerator overnight. After doing so, the chicken is removed from the bag while the marinade is reserved in a bowl. The chicken is seared in a pan until they are nice and crusted. They are taken out of the pan.
The same pan is used to stir fry some garlic and onion, bayleaves, and then the marinade is added with some water. The chicken is placed back in the pan again and from here on out, its similar to what Pinoys do with their adobo.
The results? Chicken so tender they fall off the bone and a delicious take on the Filipino classic.
