Group calls for improvement, not uniformity, for chicken inasal recipe
Hotel and Restaurant Association of Negros Occidental (HRANO) said Bacolod doesn’t need to come up with a uniform recipe for Chicken Inasal as it would dissolve the identity of the province’s signature dish.
The association expressed this following the proposal of Mayor Evelio Leonardia to come up with a recipe using uniform ingredients for all restaurants, hotels and other food establishments in Bacolod.
In a report from GMA news,Sylvia Golez, president of HRANO, said that having one inasal recipe for all restaurants would eventually dissolve the identity of each food establishment so the idea is not feasible and not good for business.
Though the group recognize the mayor’s intention to promote the chicken inasal of Bacolod, she pointed out that restaurants has to have certain distinction among each other. Each of them has its own recipe which has given them individual identity in the local food industry.
For HRANO, when one talks of chicken inasal it is already Bacolod City that they would first recognize thus, there is no need for a uniform recipe.
Instead of having uniform recipe, the better way to sustain the popularity of Bacolod’s inasal, as HRANO suggested, is to further improve the taste, presentation, develop better packaging and ensure the cleanliness and safet of the food they serve.
