Enjoy your cookies without the carbs
Rainy season is just around the corner and summer is on its deathbed. You can start easing up on your diet and enjoy the crumbly goodness of cookies.
Fortunately, Refinery 29 has found a way for you to enjoy your cookies minus the carbs and not totally lose the summer body you worked hard for.
For this, all you need is one large banana, half cup toasted sliced almonds, ¾ cup of toasted shredded coconut and a quarter cup of coarsely cubed dark chocolates.
You read it right, you can make a cookie dough without flour.
First, Heat your oven to 350°F. Then, in a food processor, pulse together the banana, half of the almonds, coconut, and half of the chocolate until smooth.
Transfer the mixture to a bowl, then fold in the remaining almonds and chocolate. Use a tablespoon-sized ice-cream scoop to scoop the dough onto a parchment-lined baking sheet.
Press each ball down to about 1/4-inch thickness.
Bake until the cookies are set for about 25 minutes. Enjoy it with a warm glass of any milk of your choice.
