Niccolo makes vegetarian version of menudo with quorn and spices
Conceptual photographer and the Red Whistle founder Niccolo Cosme may be travelling a lot for his projects but he sticks pretty well with his vegetarian diet. He often cooks for himself instead of eating out making sure that he gets to eat what he wants.
He also shares the ingredients he uses for his meals. Like for menudo, he used quorn along with the regular ingredients of the Pinoy dish. To spice things up though, he added some kaffir lime leaves and curry leaves as well as a dash of chilli.
