Here’s how you can make your own all-Pinoy egg pie at home
If you’re looking for a baking challenge that’s truly Pinoy, we are recommending that you try baking your own egg pie at home to surprise your family and friends with your new found kitchen savvy.
The good folk at Yummy recently shared their easy-to-follow recipe for the Pinoy delicacy and if you follow it closely, you might come out with the perfect pie on your first try.
To make the dough, mix 2 ½ cups all-purpose flour, 2 tbsp of sugar and a pinch of salt in a bowl. Add in 2/3 cup of butter, preferably cold and cubed, and 1 large egg yolk to the mix. Cut through butter and yolk until the mixture has the same consistency as wet sand.
Pour in two tbsp of ice water then mix again. You can add more water if you think that the mixture is still too dry. Mix it by hand until the dough begins to separate on the sides. Knead until the dough is able to form a ball and then cover it with plastic wrap. Chill for 15 minutes.
To make the filling, ¾ cup sugar, ¼ cup cornstarch, 7 large eggs, and gradually add 2 cups of warm freshmilk. When its already combined, add one egg white whipped into stiff peaks and gently fold.
Now its time to roll the dough. Place the base on an eight in deep dish pie plate. Pat and cut out the excess. Pour the filling into the plate. Bake in water bath for an hour at 350 degree Farenheit.
After that, your masterpiece is done. Delicious egg pies that will definitely impress your guests. It takes some effort but the end result will definitely be worth it.
